"The citrus colored 2016 Nierstein Hipping Riesling GG offers a clear, ripe, intense and well-concentrated bouquet of white and yellow-fleshed aromas. On the palate, this is a medium to full-bodied, highly complex and powerful dry Riesling with a silky texture, a lot of salt and mineral tension. The finish is intense but pure, complex and fresh. A classic with great aging potential. This is the coolest, purest and freshest Hipping I have ever tasted. A lot of Pettenthal character here. Schätzel tries to reduce the vigorous character of the Hipping by green covers, which result in low leaf walls which are partly just 35 centimeters. The rest is leaf management to reduce the new, bright green leaves that produce the most sugar. The low yields of 30 hectoliters per hectare are achieved without applying a green harvest."
